Sauerbraten is a German cuisine made by roasting and braising marinated beef.
Before roasting and braising, the raw beef is strongly marinated for about five days in the mixture of vinegar, water, salt and several spices. Vinegar and salt is needed to destruct the protein structure of beef, so that it can tenderize the meat.
After that, the beef is roasted in vegetable oil or animal fat. The beef is then braised and simmered in a covered pan for about four hours or more, depending on the size of the beef cut.
Sometimes, some vinegar can also be added during the braising process to enhance the taste of this cuisine.
In fact, sauerbraten is not only made of beef, but also can be made of venison, lamb, mutton, pork and horse meat.
